Vegan Lentil Quinoa Soup
Okay everyone I know I said I was going to post this months ago, forgive me I'm planning a wedding. Lentil soup is a staple in our home, it's something that gets made once a week, every week. I try new versions of it when I'm feeling bored but honestly this is the best soup I've ever had.
Lentils are a great source of protein and will add that savory feeling to any meal. If you are a meat eater you won't miss the meat. Everything in this soup is healthy, hearty and really amazing for your body. I promise if you replace your regular lunch or dinner with this soup at least twice a week you will notice a difference in your waist line and energy.
Ingredients
1 cup of Red or Green Lentils
1/2 cup of Quinoa
4 Leafs of organic kale ( Take them off the vine and chop them slightly)
2 cloves of garlic chopped
1/4 cup of chopped onion
1 cup of cooked beans ( I like to use a multi bean mixture of black beans,pinto, kidney and white)
2 containers of vegetable broth (If you are able to locate the non-chicken broth, use that!)
1/2 cup of chopped mushrooms ( Do not dice them, just simply cut in half)
1 tbsp of cumin
1/2 tbsp of curry
1 tbsp of turmeric
1/2 tbsp of garlic powder
1/2 tbsp of salt
1/2 tbsp chilli powder
1/2 tbsp pepper
2 tbsp of olive oil ( or you can use grape seed oil)
1/4 cup of chopped fresh cilantro
Instructions
Pour the olive oil in the bottom of a pot and place the pot on top of the stove. You want the heat to be medium/hot. I have a gas stove and I keep the heat slightly above 7.
Next you want to place the garlic, onion, quinoa and lentils in the pot and slightly toast them. As the oil begins to cook away pour in the broth and then the rest of the ingredients.
You want to cook the soup on high until the lentils become soft and the quinoa unravels. Continue to stir the soup periodically as to make sure nothing sticks.
If you notice all of your broth cooking away simply add 1/2 cup of water or more broth.
Turn the heat to medium and let soup sit for about 20 minutes, stirring occasionally.
Once the soup is finished you can top it with sliced avocado and about 1/4 of a squeezed lime. This of course needs to happen on individual plates.
