Vegan Biscuits
We've been eating oatmeal every day for the past few weeks and it was starting to drive everyone crazy.
I decided to make my family one of their all time favorite things to eat: vegan buttermilk biscuits. Now I don't eat biscuits and usually don't make many breads. I could cook gluten free, but honestly my body responds best to fruits, veggies, and fish. For all of my new followers, I have Crohn's disease and I try to maintain my health by eating all natural foods. Whenever I make something for my family that I don't eat myself, I always make it as healthy as possible.
So today I woke up and made my family their favorite breakfast food which is vegan biscuits. Below is the recipe.
What you need:
2 cups of flour (put an extra 1/4 cup to the side)
1 cup of non sweetened almond milk
1/2 teaspoon of vanilla extract
1 tablespoon of lemon juice
1 teaspoon of baking soda
1 tablespoon of baking powder
4 tablespoons of vegan butter
Preheat your oven to 425 degrees. Start by pouring the lemon juice and vanilla into the almond milk. Then mix in your mixing bowl all of the dry ingredients together. Add the vegan butter to the dry ingredients and break it up with your hands in the flour until there are only little chunks left. Next pour the milk into the bowl slowly as you use a wooden spoon to stir. Use the extra 1/4 cup of flour as needed if the dough becomes too sticky.
Place the dough on a floured spot on your table and then turn it over a couple times and flatten with your hands. I use a heart shaped cookie cutter or a mason jar top to cut out my biscuits. Place the biscuits on a cookie dish, then brush the biscuits with melted butter. Place in the oven and cook until biscuits are golden on the top and bottom.
Sometimes my fiancé enjoys them with eggs or jelly. When I'm feeling fancy, I add my special mushroom gravy. I'll share that recipe soon.
