Vegan Chocolate Chip Banana Bread Muffins
So our favorite thing to make in our house for a snack is Banana Bread. The recipe can be found in the back of our children's book, Beautiful Beautiful Me, with beautiful artwork by Vanessa Newton.
I will share that recipe with everyone below and then show you how I altered it to make muffins this time.
Original Chea Family Vegan Banana Bread Recipe:
Preheat oven to 325 degrees Fahrenheit
Bowl One: 2 cups of organic flour, 1 tsp of baking soda, 1 tsp of baking powder, 1 tsp salt
Bowl Two: 3 ripe bananas, 1 tbsp of unsweetened almond milk, 1 tsp of cinnamon
Bowl Three: 3/4 Cups of organic granulated sugar, 2 flaxseed eggs, 8 tbsp of vegan butter
Mix all three bowls separately and then add them together into your mixing bowl. Turn the mixer on until all ingredients are mixed together, leaving chunks of banana is ok. Lightly butter a 9" X 5" x 3" bread pan. Pour the batter into the pan and place it into the oven for 60-70 minutes. Always check your bread about 3/4 of the way through, use a knife and stick it in the middle of the bread. If it comes out clean the bread is done.
So here is how you alter the recipe to make muffins instead of bread.
Change 3/4 cup of sugar to 1/2 cup of sugar. Add 1 tbsp of apple sauce to the sugar mixture. Add 3/4 cups of white and chocolate chips to the batter after the batter is mixed. Use a spatula and gently fold the chips into the batter. Lightly butter muffin tin holes not using the liners. Use a 1/4 cup to scoop up the batter and add it into the muffin holes. Place the muffin tins into the oven and cook them for about 40 minutes. I have a gas stove and it gets hot much faster than electric, so it only took about 30 minutes for my muffins to cook. Make sure you preheat the oven at 325 F as you do the bread.
I hope you enjoy these yummy muffins and make them with your kiddies. Also you can add nuts, dried fruit or chopped fresh apples for an even healthier alternative.
